3 Healthy Salad Alternatives

Salad can be delicious and/or necessary, but there are times in our lives that eating another bowl of flavored lettuce just isn’t appealing anymore. When that time comes, it’s time to think out of the box. We have come up with 3 fun and healthy salad alternatives for when you are looking to shake things up!

Chickpeas With Spinach Recipe


-1 tsp Olive Oil
-1 garlic clove
-1/4 cup onion
-1 medium tomato, chopped
-1 green chili, minced
-1/8 tsp Coriander
-2 ox Spinach
-3 oz chick peas, boiled
-Salt and pepper, to taste


  1. If you have not boiled your chick peas, make sure to start this and then proceed with the following.
  2. Heat up olive oil then add garlic and onion. Stir and cook for 1 minute.
  3. Add tomatoes, green chilis, salt, pepper, and coriander. Cook until tender or desired consistency.
  4. Add spinach and chick peas. Stir for 1 minute.
  5. Serve and enjoy!

Corn and Tomato Salad


-2 medium tomatoes, chopped
-1/2 cup canned sweet corn
-1/4 cup onion
-1/2 cup fresh basil, Chopped
-1 tsp Olive Oil
-Salt and Pepper, to taste

1. Cut all produce and fresh herbs (Tomatoes, onion, corn, and basil)
2. Combine all produce and fresh herbs into mixing bowl and mix.
3. Add olive oil then salt and pepper to taste
4. Serve and enjoy!

Vegan Potato Salad

-7 oz potatoes
-Pinch of salt
-1/3 cup scallions
-1 tsp vegan mayonnaise
-1 tsp yellow mustard


  1. Add potatoes and salt to a pot of non-boiling water. Cover and bring to a boil then lower to medium heat.
  2. Once potatoes are cooked through, move them to a mixing bowl.
  3. Add scallions to the bowl and mix.
  4. In a separate, smaller bowl, combine vegan mayonaisse and mustard and stir.
  5. Add mayo and mustard mixture to you bowl and stir.
  6. Serve and enjoy!
